THE APPLICATIONS


As the first batch processing system with continuous flow for ham cooking and chilling in water, THERMIX ensures the complete hot and cold cycle in process tanks with continuous circulation and recycling of hot, cold and iced fluids.
THERMIX system process tanks use the patented highly compact Multimoulds system with automatic assembly; loading chain for loading and unloading the tanks, moulding, demoulding and washing the Multimoulds.

THE PROCESS

The THERMIX cook/chill system uses a process of continuous water circulation to achieve the right temperature in the ham during cooking and chilling cycle.
Hot water for the cooking, cold water for the precooling and iced water for the chilling: to assure maximum heat exchanges with the best homogeneity and temperature control.

Computer controlled, THERMIX reproduces the ideal graph of the temperature curve from cycle to cycle, with track record of all cooking parameters. This yields accurate and uniform cooking results on all products.
