Vacuum Coolix™

The Vacuum Coolix™ is a fully automated, closed-cabinet cooling system. This process is based on the phase change properties of water, the steam generated in the enclosure allows the cooling of products.

Products Features

The advantages of this type of vacuum cooling are known in the world of bakery and pastry, and thanks to such an installation your production could acquire high-end characteristics:

  • Direct treatment after cooking
  • No intermediate manipulation, no human action
  • Time savings compared to forced or natural cooling (up to 90% for natural)
  • Improvement of product homogeneity
  • Crispness: prolongs the sensation of freshness
  • Stabilization of the internal structure relative to an air-cooling solution
  • Allows to optimize and reduce the cooking time and therefore save energy
  • Reduces energy consumption by up to 15% compared to forced air systems
  • Reduces installation’s footprint
  • Allows direct packaging after production thanks to the reduction of surface moisture
  • Can be used at the output of a continuous-cooking oven or an automated batch-cooking oven
  • Direct slicing with no material waste
